so this has to be a general mma hl and not a HL of a specific fighter? because i made a new Big Nog HL recently but im not sure if it fits in with the category of "UFC and all other orgs"

That will work! Its fighters from UFC, Other Orgs or General UFC, general Orgs.

So Nog would now be in the UFC catergory. Fedor would be in the other Category.
